Tomato Rasam (with tomatoes)

Time: 10 minutes cooking + 10 minutes prep


Ingredients:


3 beef tomatoes

3 garlic cloves

1 chilli

1 small onion

1 litre of water

mustard seeds

turmeric

salt

sugar

hing

coriander

(rasam and chilli powder)


Method:


1) Add washed beef tomatoes, garlic, chilli, peeled onion and litre of water into instant pot

2) Steam in instant pot

3) Take out steamed tomato and peel off skin and put back into instant pot with all other ingredients

4) Blend all ingredients in instant pot together

5) Pour contents into pan and heat on hob

6) Add 1/2 spoon mustard seeds, 1/4 spoon turmeric, over 1/2 spoon salt, 3/2 spoons of sugar, hing, curry leaves and potentially 1/4 spoon chilli powder and 1 spoon rasam powder if rasam not spicy/flavourful enough.

7) Add chopped coriander

8) Allow to boil
